Beta Carotene is fat-soluble member of a group of compounds known as carotenoids. Mainly found in plants, these consist of approximately 100 naturally occurring yellow to red pigments, which are responsible for the colour of fruit and vegetables. Beta Carotene is found in high levels in dark green and orange-yellow vegetables such as carrots, pumpkins, spinach, broccoli, Brussels sprouts, oranges, apricots and peaches. Together with Alpha Carotene and Beta cryptoxanthin, it is a dietary precursor of vitamin A (retinol) and collectively they are called provitamin A carotenoids or provitamin A. |
